Loaded Breakfast Burritos

Ingredients

  • 1 tsp of onion, garlic, paprika and turmeric powder each
  • good pinch of kala namak salt (black salt)
  • lots of freshly ground black pepper
  • 1 tsp tamari or coconut aminos
  • 1 tbsp ketchup
  • 2-3 large handfuls of spinach
  • 1/4 cup vegan cheddar cheese

Preparation

  1. Heat up tofu in a non stick skillet and cook until all excess liquid is gone

  2. Add spices and ketchup and keep cooking for another minute

  3. Then add cheese and spinach, turn off the heat and keep stiring until spinach has wilted and cheese is melty

  4. Makes enough for at least 4 large burritos or you can store leftovers in the fridge for another time)

  5. Heat up tortilla in the microwave for 20 seconds or stove top

  6. Assemble everything in the middle of your burrito

  7. Fold over on one side, tuck in the edges, roll up carefully and enjoy ?
