Lucywatson’s

Ingredients

  • red onion
  • three medium carrots
  • celery
  • one parsnip
  • 3 cloves of garlic
  • tbsp of dried herbs
  • tomato puree
  • chopped tomatoes
  • 250ml stock
  • 3 tins of cooked green lentils
  • salt and pepper
  • 4 large chopped white potatoes
  • 4 large chopped sweet potatoes

Preparation

  1. Boil 4 large chopped white potatoes, and 4 large chopped sweet potatoes together in a saucepan for about 20 minute. W

  2. When cooked, mash until smooth with a spoonful of @Vitalite and a good glug of milk

  3. Stir through 100g of grated Tesco jalapeno ‘cheddar’ (or your favourite vegan hard cheese)

  4. Our the lentils in a glass dish, top with the mash

  5. Scrape a fork through the mash leaving lines to help the potato crisp up

  6. Cook for 20 minutes in the oven at 200 degrees fan. Serve with green veggies
