Peanut Butter Overnight Oats

Ingredients

  • 50g (half a cup) oats (gluten free if required)
  • 1 tbsp mashed banana
  • 2 tbsp any plain or vanilla yoghurt (I use dairy free)
  • 1 tbsp peanut butter
  • 8 tbsp boiling water
  • 1 tbsp sweetener or maple syrup

Preparation

  1. Get an empty jam jar or container with a lid.

  2. Put boiling water and oats in a bowl, stir with a spoon and leave for a couple of minutes to thicken.

  3. Mash the banana with a fork or microwave it for 30 seconds to make it mushy.

  4. Add all the other ingredients into the bowl and stir with a spoon, including the banana.

  5. Pour the mixture into the jar or container.

  6. Put a lid on, place in the fridge, and leave overnight.

  7. The next morning, serve it plain or with a drizzle of milk and optional peanuts for crunch.
