Peanut Butter Overnight Oats
Ingredients
- 50g (half a cup) oats (gluten free if required)
- 1 tbsp mashed banana
- 2 tbsp any plain or vanilla yoghurt (I use dairy free)
- 1 tbsp peanut butter
- 8 tbsp boiling water
- 1 tbsp sweetener or maple syrup
Preparation
Get an empty jam jar or container with a lid.
Put boiling water and oats in a bowl, stir with a spoon and leave for a couple of minutes to thicken.
Mash the banana with a fork or microwave it for 30 seconds to make it mushy.
Add all the other ingredients into the bowl and stir with a spoon, including the banana.
Pour the mixture into the jar or container.
Put a lid on, place in the fridge, and leave overnight.
The next morning, serve it plain or with a drizzle of milk and optional peanuts for crunch.
