Tuna Frittata
Ingredients
- 1 tbsp red wine vinegar
- 6 eggs, whisked
Preparation
Preheat the grill to high, and drizzle some oil in a small non-stick frying pan on a medium heat
Add the spring onions and green beans to the pan and cook for 2 minutes
Stir in the tuna and vinegar, breaking the tuna chunks apart with a wooden spoon
Pour in the eggs and parsley, stir, and cook for 3-4 minutes
Once the edges begin to cook, place the pan under the grill for a minute or two, until there’s no more runny egg on top
Allow to cool then serve
