Tuna Frittata

Ingredients

  • 1 tbsp red wine vinegar
  • 6 eggs, whisked

Preparation

  1. Preheat the grill to high, and drizzle some oil in a small non-stick frying pan on a medium heat

  2. Add the spring onions and green beans to the pan and cook for 2 minutes

  3. Stir in the tuna and vinegar, breaking the tuna chunks apart with a wooden spoon

  4. Pour in the eggs and parsley, stir, and cook for 3-4 minutes

  5. Once the edges begin to cook, place the pan under the grill for a minute or two, until there’s no more runny egg on top

  6. Allow to cool then serve
