Turkey and Mung Bean Chilli

Ingredients

  • 500g turkey mince⠀
  • 2 cups mung beans (dried) or use lentils ⠀
  • 1 x 400g chopped tomatoes⠀
  • 200ml water⠀
  • assorted veggies⠀
  • stock cube⠀
  • 1tsp cumin, coriander, tumeric, paprika⠀
  • 1tbsp balsamic vinegar⠀
  • 2 tsp dried oregano⠀
  • chilli⠀

Preparation

  1. Brown the mince, add the onion and garlic.⠀

  2. Add chopped tomatoes, mung beans and water.⠀

  3. Also to come to a simmer whilst you prep the veggies.⠀

  4. Chop whatever veg you have or use frozen. Things like broccoli stalk can be used up in a dish like this.⠀

  5. Add in the veg, along with a stock cube, cumin, coriander, tumeric, ginger, balsamic vinegar, oregano and paprika. Add chilli if wanted.⠀

  6. Simmer until the mung beans are cooked, adding more water if needed.⠀
