A Colorful Vegan Nourish Bowl
Ingredients
- Turmeric brown rice
- 400g can of chickpeas
- 1/2 medium butternut squash
- 2 teaspoons medium curry powder
- Pickled red cabbage
- Tomatoes
- Hummus
- Spinach
Preparation
Baked components
Preheat oven to 200C/180C fan/400F/Gas6 and line a baking tray with non-stick baking parchment
Chop 1/2 a medium butternut squash into bite-sized chunks and cut off the skin, then add to a mixing bowl
Drain and rinse a 400g can of chickpeas, dry them using a clean tea towel, then pour into the bowl with the squash
Season the chickpeas and butternut squash with 2 teaspoons of medium curry powder, stir everything together until coated, then place onto the lined baking tray and bake in the oven for 30 minutes until the butternut squash is soft and the chickpeas are crispy
Assembly
Cook the turmeric brown rice according to package instructions, adding turmeric if not pre-seasoned
Assemble the nourish bowl by placing spinach as a base, then adding the cooked rice, baked chickpeas and squash, pickled red cabbage, tomatoes, and hummus
