Brunch Idea

Ingredients

  • STEP 1 one big sweet potato or two small. Peel and cut in thin slices, add avo oil and salt place on the tray and cook for about 20 minutes flipping them once half way through
  • STEP 2 place bell peppers and tomatoes over the potatoes about 7 minutes
  • STEP 3 crack a few eggs on top, back to the oven for as long as you want to. Depending on how you like your eggs. Finally get the tray out of the oven and go nuts ! Add any toppings you’d like. I have avocado, @sietefoods cheese, @yellowbirdsauce, cilantro and salt. Enjoy
