Dairy Free Pancakes

Ingredients

  • 135g self raising flour
  • 1 tsp baking powder
  • 130ml milk alternative (soya/pea/oat/coconut)
  • 1 large egg
  • 2 Tbsp rapeseed or olive oil

Preparation

  1. Mix the flour and baking powder in a bowl

  2. In a separate bowl, whisk together the egg, milk alternative, and oil

  3. Combine the wet and dry ingredients until smooth

  4. Heat a frying pan over medium heat and add a small amount of oil

  5. Pour batter into the pan to form pancakes and cook until bubbles appear, then flip and cook the other side until golden
