Easy Lemonade Scones
Ingredients
- 150g self raising flour (i use gf)
- 2 tbsp (50g) thick vanilla yoghurt, plus extra for brushing (i use soya)
- 7 tbsp flavoured sparking water or lemonade
Preparation
Pre-heat the oven to 180c, 350f, gas mark 4
Put all of the ingredients into a bowl and stir with a spoon until the mixture becomes a dough consistency
Flatten out onto a floured surface and use the rim of a glass to cut out three thick circles
Place them on a baking tray and brush with some extra yoghurt
Oven bake for 12 minutes
Serve warm

Instead of using shop bought jam and clotted cream, top scones with leftover yoghurt and a homemade warm berry compote
