60 Second Healthy Cinnamon Rolls

Ingredients

  • 70g self raising flour (i use gluten free)
  • 70g any yoghurt (i use plain or vanilla soya)
  • 1 tsp any butter/ coconut oil (i use margarine)
  • 1 tsp ground cinnamon
  • 1 tsp any sugar/ sweetener/ maple syrup (i use coconut sugar)
  • optional - extra yoghurt for frosting

Preparation

  1. Get a large mug and mix the flour and yoghurt together to form a dough

  2. Put the dough onto a floured surface and roll into a flat sausage shape

  3. Spread over the margarine, sugar and cinnamon

  4. Roll up with your fingertips and pop back into the mug

  5. Microwave on high for 60 seconds (my mic is 850 watts, so you may need a little longer if yours is lower)

  6. Frost with thick vanilla yoghurt and a sprinkling of cinnamon sugar or if you're feeling naughty make a simple buttercream by mixing 1 tsp margarine with 2 tbsp icing sugar to a smooth paste
