Jam Roly Poly Mugcake

Ingredients

  • 6 tbsp self raising flour (i use gluten free) plus extra for dusting
  • 1/2 mashed banana
  • 1/2 tsp baking powder
  • 4 tbsp any milk (i use almond)
  • 1 tbsp any jam for filling (i use raspberry. can use choc spread, peanut butter or marmalade)

Preparation

  1. Mix everything (except jam) into a bowl to make a dough

  2. If it’s too sticky to handle add more flour

  3. Flour your hands and your work surface with extra flour, roll dough out into a flat sausage shape (using a rolling pin or hands) and spread jam on top

  4. Roll up and pop it into a mug

  5. Microwave on high for 90 seconds

  6. Serve on its own or with custard for dessert
