Jam Roly Poly Mugcake
Ingredients
- 6 tbsp self raising flour (i use gluten free) plus extra for dusting
- 1/2 mashed banana
- 1/2 tsp baking powder
- 4 tbsp any milk (i use almond)
- 1 tbsp any jam for filling (i use raspberry. can use choc spread, peanut butter or marmalade)
Preparation
Mix everything (except jam) into a bowl to make a dough
If it’s too sticky to handle add more flour
Flour your hands and your work surface with extra flour, roll dough out into a flat sausage shape (using a rolling pin or hands) and spread jam on top
Roll up and pop it into a mug
Microwave on high for 90 seconds
Serve on its own or with custard for dessert
