Easy Turkey and Spinach Pasta Bake
Ingredients
- 1 pack ground turkey
- 1/2 onion, diced
- 1 bell pepper
- 2-3 handfuls baby spinach
- 2 cups jarred pasta sauce
- 1/4 cup goat cheese
- 2 tablespoons reserved pasta water
- 1 tablespoon Italian seasoning
- Chili flakes, to taste
- Salt and pepper, to taste
- 3 cups penne pasta
- 1-2 cups shredded cheddar cheese or mozzarella
Preparation
Cook 3 cups of penne pasta according to package instructions, reserving 2 tablespoons of pasta water.
In a skillet, cook 1 pack of ground turkey, breaking it up as you go.
Add 1/2 diced onion and 1 bell pepper; cook for a few minutes.
Add 2-3 handfuls of baby spinach and stir until wilted.
Add 2 cups jarred pasta sauce, 1/4 cup goat cheese, 2 tablespoons reserved pasta water, 1 tablespoon Italian seasoning, a sprinkle of chili flakes, salt, and pepper; stir to combine.
Stir in the cooked pasta.
Top with 1-2 cups shredded cheddar cheese.
Bake in an oven preheated to 350°F for 15 minutes or until the top is crispy.
Option to substitute penne pasta with gluten-free noodles for dietary needs.
