Easy Turkey and Spinach Pasta Bake

Ingredients

  • 1 pack ground turkey
  • 1/2 onion, diced
  • 1 bell pepper
  • 2-3 handfuls baby spinach
  • 2 cups jarred pasta sauce
  • 1/4 cup goat cheese
  • 2 tablespoons reserved pasta water
  • 1 tablespoon Italian seasoning
  • Chili flakes, to taste
  • Salt and pepper, to taste
  • 3 cups penne pasta
  • 1-2 cups shredded cheddar cheese or mozzarella

Preparation

  1. Cook 3 cups of penne pasta according to package instructions, reserving 2 tablespoons of pasta water.

  2. In a skillet, cook 1 pack of ground turkey, breaking it up as you go.

  3. Add 1/2 diced onion and 1 bell pepper; cook for a few minutes.

  4. Add 2-3 handfuls of baby spinach and stir until wilted.

  5. Add 2 cups jarred pasta sauce, 1/4 cup goat cheese, 2 tablespoons reserved pasta water, 1 tablespoon Italian seasoning, a sprinkle of chili flakes, salt, and pepper; stir to combine.

  6. Stir in the cooked pasta.

  7. Top with 1-2 cups shredded cheddar cheese.

  8. Bake in an oven preheated to 350°F for 15 minutes or until the top is crispy.

  9. Option to substitute penne pasta with gluten-free noodles for dietary needs.
