Green Chicken Curry Soup

Ingredients

  • 1/3 a leek
  • 3 potatoes
  • 1 large carrot
  • 1 small head of a broccoli
  • 160g vegan chicken (hälsans kök)
  • 2 cans of coconut milk
  • 1 can of green curry
  • 2 dl water
  • 2 tbsp lime juice
  • 1 tsp salt
  • 1 tsp black pepper -
  • 1 dl = 100 ml

Preparation

  1. In a sauce pan, add chopped leek and some oil

  2. Fry it off and after, add chopped potatoes, carrots, the chicken and broccoli

  3. Add the liquids, the spieces and let the soup simmer for a good amount of time, until the veggies are soft

  4. Garnish with chili flakes and parsley

  5. Simple as that
