Lemon Blueberry Banana Bread
Ingredients
- 4 very ripe small bananas
- 2 flax eggs(2 tbsp flax meal + 3 tbsp water)
- 1/4 cup almond milk
- 1/8 cup coconut oil
- 1 tbsp pure maple syrup
- 1/4 cup creamy almond butter (or any nut butter)
- 1/2 lemon squeezed
- 1 tbsp chia seeds
- 1/3 cup almond flour
- 1/4 cup tigernut flour (or swap with additional almond flour)
- 3 tbsp pumpkin seed flour
- 1/3 cup fresh blueberries
- 1 tsp baking powder
- 1 tsp sea salt
Preparation
Mash bananas in a large bowl, add wet ingredients and mix well
Fold in dry ingredients including blueberries and mix until thick creamy dough forms
Pour into a bread load lined lightly with coconut oil
Sprinkle with a bit more sea salt
Bake at 350 for 20-25 minutes or until cooked through (poke a fork through, if it comes out clean, it’s done)
