Lemon Blueberry Banana Bread

Ingredients

  • 4 very ripe small bananas
  • 2 flax eggs(2 tbsp flax meal + 3 tbsp water)
  • 1/4 cup almond milk
  • 1/8 cup coconut oil
  • 1 tbsp pure maple syrup
  • 1/4 cup creamy almond butter (or any nut butter)
  • 1/2 lemon squeezed
  • 1 tbsp chia seeds
  • 1/3 cup almond flour
  • 1/4 cup tigernut flour (or swap with additional almond flour)
  • 3 tbsp pumpkin seed flour
  • 1/3 cup fresh blueberries
  • 1 tsp baking powder
  • 1 tsp sea salt

Preparation

  1. Mash bananas in a large bowl, add wet ingredients and mix well

  2. Fold in dry ingredients including blueberries and mix until thick creamy dough forms

  3. Pour into a bread load lined lightly with coconut oil

  4. Sprinkle with a bit more sea salt

  5. Bake at 350 for 20-25 minutes or until cooked through (poke a fork through, if it comes out clean, it’s done)
