Clean Homemade Remake of Oreos
Ingredients
- 2 tbsp vegan butter or coconut oil
- 2 1/2 tbsp nut milk
- 1/2 cup almond flour
- 3/4 cup raw cacao powder
- 1/2 cup raw coconut sugar
- 1/2 tsp baking powder
- pink sea salt to sprinkle
- filling:
- note this filling will make 2 cups, use for remainder for frostings, or other recipes)
- 1 1/2 cup raw cashews soaked in hot water for 1 hour
- 1/2 cup full fat coconut cream
- 1 tbsp coconut oil
- 3 tbsp pure maple syrup
- pink or pink sea salt
Preparation
Directions for the cookies
Preheat oven to 320 degrees (lower temps are better for a crispier cookie) add butter and milk to a large bowl and stir. Mix in flour, cacao, coconut sugar and baking powder. (The dough tastes like a brownie, try not to eat it all lol). Spoon onto a lined baking sheet, press down with a fork and sprinkle with sea salt. Bake for 15-17 minutes or until crispy (but not burnt). Let cool
Directions for the filling: In a blender, add all filling ingredients and blend until creamy, about 3 minutes
All cashews prices should be fully blended! transfer to a bowl, cover and freeze for 45 minutes
Whisk with a fork, refreeze for 30 minutes
Spread about a spoonful of filling between two cookies and continue until all cookies are used
Refreeze for another 20 minutes
You can keep these in the freezer or fridge! I preferred the freezer
