Clean Homemade Remake of Oreos

Ingredients

  • 2 tbsp vegan butter or coconut oil
  • 2 1/2 tbsp nut milk
  • 1/2 cup almond flour
  • 3/4 cup raw cacao powder
  • 1/2 cup raw coconut sugar
  • 1/2 tsp baking powder
  • pink sea salt to sprinkle
  • filling:
  • note this filling will make 2 cups, use for remainder for frostings, or other recipes)
  • 1 1/2 cup raw cashews soaked in hot water for 1 hour
  • 1/2 cup full fat coconut cream
  • 1 tbsp coconut oil
  • 3 tbsp pure maple syrup
  • pink or pink sea salt

Preparation

  1. Directions for the cookies

  2. Preheat oven to 320 degrees (lower temps are better for a crispier cookie) add butter and milk to a large bowl and stir. Mix in flour, cacao, coconut sugar and baking powder. (The dough tastes like a brownie, try not to eat it all lol). Spoon onto a lined baking sheet, press down with a fork and sprinkle with sea salt. Bake for 15-17 minutes or until crispy (but not burnt). Let cool

  3. Directions for the filling: In a blender, add all filling ingredients and blend until creamy, about 3 minutes

  4. All cashews prices should be fully blended! transfer to a bowl, cover and freeze for 45 minutes

  5. Whisk with a fork, refreeze for 30 minutes

  6. Spread about a spoonful of filling between two cookies and continue until all cookies are used

  7. Refreeze for another 20 minutes

  8. You can keep these in the freezer or fridge! I preferred the freezer
