Peanut Tempeh and Lentil Stir Fry

Ingredients

  • Tempeh or tofu
  • Assorted vegetables (e.g., kale, green beans, broccoli)
  • Puy lentils (half a packet)

Sauce

  • 2 tablespoons peanut butter
  • 2 tablespoons almond milk
  • 1 tablespoon soy sauce or tamari
  • Juice of one lime
  • 1/2 teaspoon ginger
  • 1/2 teaspoon garlic

Preparation

  1. Chop tempeh or tofu and begin to pan fry.

  2. In a dish, combine 2 tablespoons peanut butter, 2 tablespoons almond milk, 1 tablespoon soy sauce or tamari, juice of a lime, 1/2 teaspoon ginger, and 1/2 teaspoon garlic to make the sauce.

  3. Add the sauce to the pan with the tempeh.

  4. Add a selection of vegetables of your choice.

  5. Add half a packet of puy lentils.

  6. Fry for a further 5 minutes on a low heat and then serve.
