Peanut Tempeh and Lentil Stir Fry
Ingredients
- Tempeh or tofu
- Assorted vegetables (e.g., kale, green beans, broccoli)
- Puy lentils (half a packet)
Sauce
- 2 tablespoons peanut butter
- 2 tablespoons almond milk
- 1 tablespoon soy sauce or tamari
- Juice of one lime
- 1/2 teaspoon ginger
- 1/2 teaspoon garlic
Preparation
Chop tempeh or tofu and begin to pan fry.
In a dish, combine 2 tablespoons peanut butter, 2 tablespoons almond milk, 1 tablespoon soy sauce or tamari, juice of a lime, 1/2 teaspoon ginger, and 1/2 teaspoon garlic to make the sauce.
Add the sauce to the pan with the tempeh.
Add a selection of vegetables of your choice.
Add half a packet of puy lentils.
Fry for a further 5 minutes on a low heat and then serve.
