Rainbow Cookies

Ingredients

  • 350g plain flour
  • 300g vegan butter block
  • 100g caster sugar
  • 2 tsp vanilla extract

Preparation

  1. I mix mine in the food processor to make things really easy. But you can mix by hand if you prefer

  2. Put the flour, sugar and vanilla in the food processor then cut the butter up into small pieces and add them in too. Whizz it up until the mixture starts to clump together but don’t be tempted to wait until you get a smooth dough - you don’t want to overmix. Take the mixture out of the machine and press it together with your hands, then roll out on a well floured surface to about 5mm thick

  3. Cut out with a cookie cutter and place on lined baking sheets

  4. Bake at 180C for 10 minutes or until the edges are just beginning to brown. Cool on wire racks before icing
