Spicy Cajun Salmon Tacos with Vegetables

Ingredients

  • 2 peppers
  • 1/2 onion
  • a handful of mushrooms
  • 1 tablespoon olive or avocado oil
  • 2 teaspoons Cajun seasoning
  • 1 salmon filet
  • tortillas
  • avocado
  • romaine

Preparation

  1. Preheat oven to 425°F

  2. Cut up 2 peppers, 1/2 onion, and a handful of mushrooms

  3. Coat the vegetables with 1 tablespoon olive or avocado oil and 2 teaspoons Cajun seasoning

  4. Place the coated veggies in a baking pan and cook for 10 minutes

  5. Remove from oven and add a salmon filet coated with the same seasoning

  6. Bake for another 12 minutes

  7. Remove and assemble into tacos using tortillas, avocado, and romaine

  8. Heat tortillas in a skillet separately if desired

  9. Note: This recipe has a spicy kick from the Cajun seasoning, adjust seasoning to taste
