Spicy Cajun Salmon Tacos with Vegetables
Ingredients
- 2 peppers
- 1/2 onion
- a handful of mushrooms
- 1 tablespoon olive or avocado oil
- 2 teaspoons Cajun seasoning
- 1 salmon filet
- tortillas
- avocado
- romaine
Preparation
Preheat oven to 425°F
Cut up 2 peppers, 1/2 onion, and a handful of mushrooms
Coat the vegetables with 1 tablespoon olive or avocado oil and 2 teaspoons Cajun seasoning
Place the coated veggies in a baking pan and cook for 10 minutes
Remove from oven and add a salmon filet coated with the same seasoning
Bake for another 12 minutes
Remove and assemble into tacos using tortillas, avocado, and romaine
Heat tortillas in a skillet separately if desired
Note: This recipe has a spicy kick from the Cajun seasoning, adjust seasoning to taste
