Sticky Apricot and Cashew Energy Balls

Ingredients

  • 150g desiccated coconut
  • 140g whitworths golden apricots
  • 100g whitworths crunchy cashews
  • 80g whitworths jumbo flame raisins
  • 60g pitted dates
  • 70g cashew butter (or nut butter of your choice)
  • 1 tsp. vanilla extract

Preparation

  1. Add the pitted dates, apricots and raisins to a food processor and blend until they combine and become a sticky paste

  2. Then add the cashew nuts, desiccated coconut, cashew butter and vanilla extract

  3. Blend/pulse until all the ingredients are roughly combined and you can squeeze the mix together into a ball

  4. You can weigh each ball to 30g portions or roughly roll into about 18 energy balls

  5. Store in an airtight container

  6. If it’s warm in the fridge

  7. Will keep for up to 2 weeks
