Vegan Double Chocolate Zucchini Bread

Ingredients

Wet

  • 2 very ripe bananas, mashed
  • 1 small zucchini, grated
  • 2 tbsp almond butter
  • 1/4 cup unsweetened applesauce
  • 1/2 tbsp apple cider vinegar

Dry

  • 1 tbsp flax meal
  • 2 tbsp Lucuma (or coconut sugar)
  • 2 tbsp psyllium husk (or omit)
  • 2 tbsp cacao or cocoa powder
  • 2 1/2 scoops chocolate protein
  • 1/2 cup buckwheat flour (almond flour should work)
  • 2 tbsp coconut flour
  • 1/8 cup dark chocolate chips
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • Pinch of sea salt

Preparation

  1. Preheat oven to 350 degrees Fahrenheit

  2. In a large bowl, mash the banana

  3. Add the zucchini, almond butter, applesauce and vinegar and mix well until creamy

  4. Add dry ingredients and mix well until flours are well combined and batter is thick

  5. Pour into a non-stick or lightly oiled bread loaf pan, and bake for 30 minutes
