Vegan Lemon Mousse

Ingredients

  • 1 1/2 cup raw cashews
  • 1/4 cup melted cacao or coconut butter
  • 1 cup lemon juice
  • 2 tbsp maple syrup
  • 2 tbsp monk fruit or erythritol or more maple syrup
  • 1/2 tsp moringa powder
  • 2 tsp psyllium husk
  • pinch himalayan sea salt
  • zest of lemon

Preparation

  1. Blend the cashews with the butter until very fine crumbs

  2. Add the remaining ingredients and blend until very smooth. If it is too thick, you can add some warm water or extra lemon juice. It’s very important that you have a powerful blender! ?Top with extra lemon zest. In the picture I used lime because of the nice green color

  3. Refrigerate until ready to serve
