Vegan Spring Rolls with Mango and Peanut Sauces

Ingredients

Mango sauce

  • 1 ripe mango
  • 1/2 avocado
  • Juice of one lime
  • 1 Tbsp olive oil
  • 1 Tbsp tahini
  • Salt and pepper to taste

Peanut butter sauce

  • 1/2 cup peanut butter
  • 2 Tbsp coconut sugar

Spring rolls

  • Rice paper sheets
  • Cucumbers
  • Sprouts
  • Mango slices
  • Avocado
  • Red bell pepper
  • Carrots

Preparation

  1. Mix peanut butter and coconut sugar with 2 tablespoons of water, adding more slowly until desired consistency is achieved.

  2. Blend mango, avocado, lime juice, olive oil, tahini, salt, and pepper together until smooth.

  3. Dip rice paper sheets in warm water for about 10 seconds to soften.

  4. Place the softened rice paper on a cutting board and let it dry for a couple of minutes.

  5. Add the chosen vegetables and roll up like a burrito.

  6. Dip the spring rolls in the sauces and serve.
