Chocolate Chunk Pancakes

Ingredients

  • • 1 tbsp coconut butter
  • • 1 tbsp unsweetened organic applesauce
  • • 1/2 cup unsweetened almond milk (I used )
  • • 1 scoop vanilla protein (used )
  • • 1/2 date
  • • 1/4 cup hazelnut paleo flour (almond flour works too)
  • • 1 Chia egg (1 tbsp chia seeds + 3 tbsp water, mix and let sit to thicken for 5-10 min)
  • • Cinnamon
  • • Nutmeg

Preparation

  1. Blend all until creamy. Lightly oil a skillet with coconut oil. Spoon mixture into mini pancakes and flip when they start to brown

  2. Topped with more melted @eatingevolved coconut butter + walnut + 1/2 @eatingevolved keto cup crumbles
