Salad
Ingredients
- 1.5 cups quinoa GoGo Quinoa
- 1/2 cup dried cranberries
- 1 cup cooked chickpeas
- 1 cup apple, bite size
- 1 cup roasted butternut squash
- 1/2 cup red pepper, small dice
- 1 cup purple cabbage, thinly sliced
- 1 cup fresh cilantro, chopped
- 1/3 cup roasted pumpkin seeds
- DRESSING
- 1/2 tbsp minced garlic
- 2 tbsp curry powder
- 1/4 cup sunflower oil
- 1.5 tbsp maple syrup
- 1/3 cup wheat free tamari
- 1/3 cup apple cider vinegar
Preparation
Cook quinoa as directed
Set aside and let it cool
In medium size bowl mix all ingredients
In a small bowl whisk together the dressing ingredients
Toss and serve
