Carrot Cakes Recipe
Ingredients
- ~1-1.5 cups leftover juice pulp (I used carrot, apple, & ginger)
- ~1/2 cup medjool dates ~1 cup sprouted/ soaked walnuts ~3tbsp pure maple syrup ~cinnamon & nutmeg ~3 tbsp raw coconut oil (can omit to make oil free)
Preparation
Combine everything into food processor and pulse until consistency where you can mold ! Adding more maple syrup if necessary! I added into a silicone muffin tin and froze for 20 min to let set!..?defrost on counter and top with coconut whip
COCONUT WHIP-
Refrigerated can of coconut milk chilled overnight + organic vanilla bean powder whipped together in kitchen-aid with a whip accessory! I use the Thai one or Whole Foods brand! (Bpa free ) sometimes coco whip is tricky because some cans are duds and do not whip properly! Keep trying and do not give up!! lol it’s worth it ?put on top and garnish with cinnamon & nutmeg
