Creamy Avocado Pasta with Zucchini and Basil
Ingredients
- 1 ripe avocado
- 2 minced garlic cloves
- 1/2 cup fresh basil
- juice from 1 lemon
- handful raw spinach
- 2 tbsp evoo (or sub veggie broth until you get a nice consistency)
- salt & pepper to taste
- 1 zucchini, thinly sliced
- 1 box / 8 oz chickpea pasta or pasta of choice
Preparation
Cook pasta, drain and set aside.
Meanwhile, heat a non-stick skillet over medium-high heat.
Add chopped zucchini with some salt & pepper and cook until browned (a dash of oil is optional).
In a food processor, combine avocado, garlic, basil, lemon juice, spinach and evoo.
Process until smooth.
Toss on pasta and add zucchini on top.
