Easy Coconut Chocolate Bark

Ingredients

  • 1 cup Cacao Butter
  • 1/2 cup Coconut Butter
  • 1 tbsp Monk Fruit Sweetener or stevia
  • 1 tbsp Maple Syrup
  • 1 tbsp Shredded coconut
  • 2 tbsp Cocoa Powder
  • 2 tsp Goji berries
  • Pumpkin seeds
  • 1 pinch Himalayan sea salt

Preparation

  1. Melt the cacao butter and coconut butter in a double boiler or glass bowl

  2. Stir in the monk fruit sweetener or stevia, maple syrup, and cocoa powder

  3. Add the shredded coconut and Himalayan sea salt to the mixture

  4. Pour the mixture over parchment paper in a non-stick pan

  5. Sprinkle goji berries and pumpkin seeds over the top

  6. Place in the freezer to chill for 1-2 hours and then gently break into pieces when ready

  7. Store in the fridge or freezer
