Easy Vegan Oat Dessert with Blueberries

Ingredients

  • 1.5 cups oats
  • 2 tbsp agave or sweetener of your choice
  • 1/2 cup coconut flour
  • 1 tbsp vanilla extract
  • 1 tbsp baking powder
  • 100 to 150g bananas
  • a pinch of salt

Top layer components

  • 1/2 cup almond milk
  • 3 cups frozen blueberries
  • optional 1 tsp agar powder
  • frozen cherries
  • coconut

Preparation

  1. Add the base ingredients to a food processor and pulse until well mixed.

  2. Bake the mixture at 350°F until golden brown, about 15-20 minutes.

  3. For the top layer, blend 1/2 cup almond milk, 3 cups frozen blueberries, and optional 1 tsp agar powder.

  4. Top the baked base with the blended mixture, then add frozen cherries and coconut.

  5. Freeze until solid and then enjoy.
