Fluffy Pancakes with Berries and Cacao

Ingredients

  • 1 cup wholemeal spelt flour
  • 2tbsp coconut flour
  • 2tbsp xylitol
  • 1tbsp flaxseeds
  • 1 1/2tbsp cacao powder
  • 1cup almond milk (unsweetened)
  • 1tsp baking powder
  • 1 pinch of salt
  • 2 tsp vanilla extract

Preparation

  1. add all ingredients to a bowl and combine them with a hand mixer or a whisk

  2. heat a pan over medium heat and add some coconut oil to it

  3. cook the pancakes for about 2 minutes on the first side, flip and cook for 1 minute on the other side (until cooked through)
