Blueberry Pancakes with Oats and Coconut Flour
Ingredients
- 1 cup coconut flour
- 1 cup quick oats (add up to 1/2 cup more if needed)
- 1 teaspoon chia seeds
- 2 tablespoons xylitol
- 2 teaspoons baking powder
- 1 teaspoon vanilla sugar
- pinch of salt
- 1.5 cups milk of choice
- 1 teaspoon oil
- handful of blueberries
Preparation
Mix all ingredients in a mixer until a sticky batter forms.
Gently fold in blueberries with a spoon until combined.
Preheat a flat pan over medium-high heat.
Scoop 1/4 cup of batter onto the pan.
Cook until bubbles form, then flip.
Cook the other side until golden brown.
Serve hot with desired toppings.
