Blueberry Pancakes with Oats and Coconut Flour

Ingredients

  • 1 cup coconut flour
  • 1 cup quick oats (add up to 1/2 cup more if needed)
  • 1 teaspoon chia seeds
  • 2 tablespoons xylitol
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla sugar
  • pinch of salt
  • 1.5 cups milk of choice
  • 1 teaspoon oil
  • handful of blueberries

Preparation

  1. Mix all ingredients in a mixer until a sticky batter forms.

  2. Gently fold in blueberries with a spoon until combined.

  3. Preheat a flat pan over medium-high heat.

  4. Scoop 1/4 cup of batter onto the pan.

  5. Cook until bubbles form, then flip.

  6. Cook the other side until golden brown.

  7. Serve hot with desired toppings.
