Grab-And-Go Blueberry Zucchini Muffins

Ingredients

  • • 1 and 3/4 cups all-purpose flour
  • • 1 tsp baking soda
  • • 1 tsp baking powder
  • • 1/2 tsp salt
  • • 1/2 cup unsalted butter, room temperature
  • • 1/2 cup pure cane sugar or coconut sugar
  • • 1/4 cup brown sugar
  • • 2 large eggs
  • • 1/2 cup plain or vanilla greek yogurt
  • • 2 tsp vanilla extract
  • • 1/4 cup plant milk
  • • 1 and 1/2 cups frozen or fresh blueberries
  • • 1 and 1/2 cups shredded zucchini

Preparation

  1. Preheat oven 350F - spray muffin pan or place down liners

  2. Whisk flour, baking soda, baking powder, and salt together

  3. Then mix butter, sugar, and brown sugar until smooth and creamy

  4. Add your eggs, yogurt, vanilla extract, and milk

  5. Combine your wet ingredients into dry ingredients

  6. Lastly fold in the blueberries and zucchini - spoon batter into muffin pan (all the way to the top) and bake for about 20 minutes
