Eggless Dates Raisin Cake
Ingredients
- 1 1/2 cups all-purpose flour or maida, about 190 grams (organic flour)
- 3/4 cup dates, boiled and blended (natural unrefined)
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup oil
- 1 cup curd or yogurt (do not use sour curd)
- 2 to 3 tablespoons milk
- 3/4 to 1 tablespoon vanilla extract
Preparation
Grease a 7 or 8 inch cake tray and line with parchment paper or dust with flour.
Preheat the oven to 170°C for at least 15 minutes.
In a large mixing bowl, add fresh curd, blended dates, and vanilla extract.
Mix until the dates dissolve completely and there are no lumps of curd.
Pour in the oil and mix well until combined.
Add the baking powder and baking soda.
Add the flour and mix until well combined
If the batter is thick, add 2 to 3 tablespoons of milk and mix in.
Bake the cake for 25 to 30 minutes or until done, adjusting time based on your oven.
