Choco Chip Cookie Dough Cake
Ingredients
- extra virgin coconut oil - 200ml
- date jaggery - 150gms
- almond flour - 250gms
- oatmeal flour - 50gms
- 80% dark chocolate - 100gms
- eggs - 4nos
- baking powder - 1 tsp
- vanilla extract - 1 tsp
Preparation
Methodology
Whisk together the Jaggery powder & the coconut oil until combined and slightly aerated. - Add the Vanilla essence
In a separate pan, mix the almond flour with roughly broken chocolate chips, baking powder & oatmeal flour
In the Jaggery mixture, drop in the eggs one at a time and mix well
Fold in the almond flour mix into the batter
Line a baking tray and fill the batter into the mould till 3/4 level
Bake in a pre heated oven at 180c for the first 20 minutes and reduce the temperature till 160c for another 20 minutes
The best way to check the doneness of a cake is to ensure an inserted skewer comes out clean
Cool de mould and enjoy this delight
