Choco Chip Cookie Dough Cake

Ingredients

  • extra virgin coconut oil - 200ml
  • date jaggery - 150gms
  • almond flour - 250gms
  • oatmeal flour - 50gms
  • 80% dark chocolate - 100gms
  • eggs - 4nos
  • baking powder - 1 tsp
  • vanilla extract - 1 tsp

Preparation

  2. Whisk together the Jaggery powder & the coconut oil until combined and slightly aerated. - Add the Vanilla essence

  3. In a separate pan, mix the almond flour with roughly broken chocolate chips, baking powder & oatmeal flour

  4. In the Jaggery mixture, drop in the eggs one at a time and mix well

  5. Fold in the almond flour mix into the batter

  6. Line a baking tray and fill the batter into the mould till 3/4 level

  7. Bake in a pre heated oven at 180c for the first 20 minutes and reduce the temperature till 160c for another 20 minutes

  8. The best way to check the doneness of a cake is to ensure an inserted skewer comes out clean

  9. Cool de mould and enjoy this delight
