Banana Rose Bundt Cake

Ingredients

  • 4 over-ripe bananas
  • 1/2 cup chopped walnuts (optional)
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 whole egg
  • 1 egg white
  • 4 tbsp of coconut sugar
  • 1/2 tsp of baking soda
  • 6 oz of Greek Yogurt
  • A dash of vanilla extract
  • Pinch of nutmeg (and cinnamon)

Preparation

  1. Preheat your oven to 350°F. Grease the rose bundt pan with oil

  2. Take a large bowl and whisk in all your wet ingredients. Then mix your dry ingredients in a separate bowl

  3. Incorporate both mixtures together and stir them until you get a silky smooth batter. Then pour your cake batter into the rose bundt pan. Do not pour too much or the rose shape won’t turn out right

  4. Pop it in the oven and bake for 25 minutes. Check the cake after every 15 minutes to avoid overcooking

  5. Let it cool and then serve
