Holiday Pumpkin Oatmeal Breakfast

Ingredients

  • 2 packets Chia Crunch or just over 1/2 cup oats
  • 1/4 cup pumpkin purée
  • 1/2 cup water
  • 1/2 cup plant milk
  • 1/2 tsp vanilla extract or powder
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp turmeric blend
  • A dash of cinnamon

Toppings

  • Pomegranate
  • Persimmon
  • chia seeds
  • pumpkin seeds
  • Pecans
  • Almond yogurt

Preparation

  1. Combine all ingredients from the Ingredients section in a saucepan.

  2. Cook over medium heat, stirring occasionally, until the mixture thickens and oats are soft, about 5-10 minutes.

  3. Remove from heat and let it rest for a minute.

Assembly

  1. Add the toppings: pomegranate, persimmon, chia seeds, pumpkin seeds, pecans, and almond yogurt.
