Holiday Pumpkin Oatmeal Breakfast
Ingredients
- 2 packets Chia Crunch or just over 1/2 cup oats
- 1/4 cup pumpkin purée
- 1/2 cup water
- 1/2 cup plant milk
- 1/2 tsp vanilla extract or powder
- 1/2 tsp pumpkin pie spice
- 1/2 tsp turmeric blend
- A dash of cinnamon
Toppings
- Pomegranate
- Persimmon
- chia seeds
- pumpkin seeds
- Pecans
- Almond yogurt
Preparation
Combine all ingredients from the Ingredients section in a saucepan.
Cook over medium heat, stirring occasionally, until the mixture thickens and oats are soft, about 5-10 minutes.
Remove from heat and let it rest for a minute.
Assembly
Add the toppings: pomegranate, persimmon, chia seeds, pumpkin seeds, pecans, and almond yogurt.
