Glowing Pumpkin Pie Oats

Ingredients

  • 2 packets rightfood Chia Crunch or just over 1/2 cup oats
  • 1/4 cup pumpkin purée
  • 1/2 cup water
  • 1/2 cup ripplefoods plant milk
  • 1/2 tsp vanilla extract or powder
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp moodbeli turmeric blend
  • A dash of cinnamon

Toppings

  • a drizzle of kitehillfoods almond yogurt
  • sautéed spiced apples
  • fd raspberries
  • pecans
  • salbachia chia seeds

Preparation

  1. Combine all main ingredients in a pot or microwave-safe bowl and cook until the oats are soft and mixture thickens, about 5-10 minutes on the stove or 2-3 minutes in the microwave.

  2. While the oats are cooking, prepare the toppings: sauté the apples with a pinch of spices in a pan until tender.

  3. Assemble by topping the cooked oat mixture with almond yogurt, sautéed apples, raspberries, pecans, and chia seeds, then serve immediately.
