Vegan Pumpkin Spice Overnight Oats

Ingredients

  • good for meal prep!
  • pumpkin spice overnight oats:
  • 1/2 cup pumpkin purée;
  • 1/2 cup coconut milk;
  • 1/4 cup oats;
  • 1 tbsp chia seeds;
  • 1/2 tsp cinnamon;
  • 1/2 tsp pumpkin spice;
  • 1/2 tsp vanilla extract;
  • pinch of sea salt;

Preparation

  1. Put all ingredients into a jar

  2. Next morning you can eat as it is or heat it up on a saucepan on a medium heat and stir until warm up

  3. Add a bit more liquid if needed it

  4. Top with fresh fruits, nuts, bee pollen and/or shredded coconut
