Apple Pie Flavored Oatmeal

Ingredients

  • 1/2 cup oats (quick or rolled, or quick steel cut varieties)
  • 1 tbsp ground flaxseed
  • 1/2 tsp pumpkin pie spice
  • Pinch of cardamom
  • 2 tbsp chopped dried apples
  • Pinch of salt
  • 1 cup unsweetened almond milk (add more if desired for looser consistency)

Apple topping

  • 1 Fuji apple (thinly sliced)
  • 1 tsp sweetener of choice (e.g., date syrup)
  • Pinch of cinnamon
  • Pinch of salt
  • 1 tbsp water

Preparation

  1. Add all ingredients to a saucepan and bring to a low medium heat to simmer.

  2. Stir oats with a spoon or spatula as it cooks for about 3 minutes.

  3. Remove from stovetop and top oatmeal as desired.

Apple topping

  1. Thinly slice a Fuji apple.

  2. Cook the sliced apple on the stovetop with 1 teaspoon of sweetener, a pinch of cinnamon, a pinch of salt, and 1 tablespoon of water.

  3. Allow the apples to cook and brown until softened, then pour over the oatmeal.
