Cinnamon Banana Oats with Warm Fruit Topping

Ingredients

  • 1/2 cup oats (quick or rolled, or quick steel cut varieties)
  • 1 tbsp ground flaxseed
  • 1/2 tsp cinnamon
  • 1 sliced banana or 1/4 cup apple sauce
  • Pinch of salt
  • 1 cup unsweetened plant milk

Apple topping

  • 1 Fuji apple, thinly sliced
  • 1 tsp sweetener of choice (e.g., date syrup)
  • Pinch of cinnamon
  • Pinch of salt
  • 1 tbsp water

Preparation

  1. Add all ingredients to a saucepan and bring to a low medium heat to simmer.

  2. Stir the oats with a spoon or spatula as it cooks for about 3 minutes.

  3. Remove from the stove top and top the oatmeal as desired.

  4. If you don't like banana as a sweetener, use apple sauce instead.

Fruit topping

  1. Thinly slice a Fuji apple.

  2. Add the sliced apple to a pan with 1 tsp of sweetener of choice, a pinch of cinnamon, a pinch of salt, and 1 tbsp water.

  3. Cook the apples until the liquid is absorbed and they brown.

  4. Pour the cooked apples over the oatmeal.
