Fall-Inspired Apple Pie Oats

Ingredients

  • 1/2 cup oats (quick or rolled, doesn’t matter)
  • 1 tbsp ground flaxseed
  • 1/2 tsp pumpkin pie spice
  • Pinch cardamom
  • 2 tbsp chopped dried apples
  • Pinch of salt
  • 1 cup unsweetened almond milk

Apple topping

  • 1 Fuji apple, thinly sliced
  • 1 tsp sweetener of choice
  • Pinch of cinnamon
  • Pinch of salt
  • 1 tbsp water

Preparation

  1. Add all ingredients to a sauce pan and bring to a low medium heat to simmer.

  2. With a spoon or spatula, stir oats as it cooks for about 3 minutes.

  3. Remove from stove top and top oatmeal as desired.

Apple topping

  1. Thinly slice a Fuji apple.

  2. Add the sliced apple, 1 teaspoon of sweetener of choice, a pinch of cinnamon, a pinch of salt, and 1 tablespoon water to a pan.

  3. Cook until apples brown and soften.

  4. Pour over the oatmeal.
