Fall-Inspired Apple Pie Oats
Ingredients
- 1/2 cup oats (quick or rolled, doesn’t matter)
- 1 tbsp ground flaxseed
- 1/2 tsp pumpkin pie spice
- Pinch cardamom
- 2 tbsp chopped dried apples
- Pinch of salt
- 1 cup unsweetened almond milk
Apple topping
- 1 Fuji apple, thinly sliced
- 1 tsp sweetener of choice
- Pinch of cinnamon
- Pinch of salt
- 1 tbsp water
Preparation
Add all ingredients to a sauce pan and bring to a low medium heat to simmer.
With a spoon or spatula, stir oats as it cooks for about 3 minutes.
Remove from stove top and top oatmeal as desired.
Apple topping
Thinly slice a Fuji apple.
Add the sliced apple, 1 teaspoon of sweetener of choice, a pinch of cinnamon, a pinch of salt, and 1 tablespoon water to a pan.
Cook until apples brown and soften.
Pour over the oatmeal.
