Cozy Apple Pie Inspired Oats

Ingredients

  • 1/2 cup oats (quick or rolled)
  • 1 tablespoon ground flaxseed
  • 1/2 teaspoon pumpkin pie spice
  • Pinch of cardamom
  • 2 tablespoons chopped dried apples
  • Pinch of salt
  • 1 cup unsweetened almond milk

Toppings

  • 1 Fuji apple (thinly sliced)
  • 1 teaspoon sweetener of choice (e.g., date syrup)
  • Pinch of cinnamon
  • Pinch of salt
  • 1 tablespoon water
  • Berries (as desired)
  • Pepitas (as desired)
  • Hemp seeds (as desired)

Preparation

  1. Add all ingredients to a saucepan and bring to a low medium heat to simmer.

  2. Stir oats with a spoon or spatula as it cooks for about 3 minutes.

  3. Remove from stovetop and top oatmeal as desired.

  4. Thinly slice a Fuji apple for the topping.

  5. Cook the apple slices on the stovetop with 1 teaspoon of sweetener, a pinch of cinnamon, a pinch of salt, and 1 tablespoon of water until browned and softened.

  6. Pour the cooked apples over the oatmeal.
