Easy Vegan Pumpkin Pie Oats
Ingredients
- 1 cup steel cut oats
- 3 cups of water
- 1 cup pumpkin purée
- 1 tbsp pumpkin pie spice
- 1 tsp cinnamon
- Handful of raisins or cranberries
- Optional: 1-2 ripe pears, chopped
Preparation
Cook in instant pot for 10 minutes on manual setting.
Alternatively, add all ingredients to a pot, bring to a boil, then simmer until oats are done, stirring frequently to avoid burning.
Top with cinnamon maple almond yogurt, figs, a dandy candy plum, pepitas, and crunchy pumpkin granola clusters.
For regular oats, use only 2 cups of water.
