Easy Vegan Pumpkin Pie Oats

Ingredients

  • 1 cup steel cut oats
  • 3 cups of water
  • 1 cup pumpkin purée
  • 1 tbsp pumpkin pie spice
  • 1 tsp cinnamon
  • Handful of raisins or cranberries
  • Optional: 1-2 ripe pears, chopped

Preparation

  1. Cook in instant pot for 10 minutes on manual setting.

  2. Alternatively, add all ingredients to a pot, bring to a boil, then simmer until oats are done, stirring frequently to avoid burning.

  3. Top with cinnamon maple almond yogurt, figs, a dandy candy plum, pepitas, and crunchy pumpkin granola clusters.

  4. For regular oats, use only 2 cups of water.
