Homemade Vegan Herbed Cream Cheese

Ingredients

  • 1 cup raw cashews soaked overnight and drained
  • 1/2 cup coconut cream
  • 1 Tablespoon vinegar
  • 1 Tablespoon lemon juice
  • 1/4 teaspoon dried garlic
  • 1 teaspoon dried dill
  • 1 teaspoon dried chives
  • Salt to taste

Preparation

  1. Soak cashews in water overnight.

  2. Drain and rinse the cashews.

  3. Add cashews, coconut cream, vinegar, and salt to a small blender or food processor and process until super smooth.

  4. Fold in dill and chives and pour into a small dish or jar that seals well.

  5. Seal and chill in fridge until firm.

  6. Spread on toast or bagels to serve.
