Loaded Sweet Potato with Yogurt Berries and Granola
Ingredients
- 1 medium sweet potato
- coconut yogurt or plain yogurt
- blackberries
- granola
- honey
- hemp seeds
Preparation
Bake a medium sized sweet potato at 350°F for 45 minutes to one hour or until the inside is soft and fluffy.
Let it cool for 10 minutes.
Slice it down the middle.
Use a fork to gently scoop out the inside of the sweet potato but do not remove it.
Scoop coconut yogurt or plain yogurt on top.
Add berries, granola, a drizzle of honey, and some hemp seeds.
This can be eaten as a meal or dessert to satisfy sweet cravings while providing healthy carbs and protein.
