Loaded Breakfast Sweet Potato Bowl
Ingredients
- 1 small sweet potato
- raspberries
- coconut oil or ghee
- 1/2 to 1 tablespoon nut butter (e.g., almond butter)
- 2 tablespoons or more coconut yogurt
- hemp seeds
- goji berries
- cacao powder (e.g., Yoursuperfoods chocolate lovers)
- 1/4 of an Elemental Superfood bar
Preparation
Slice the sweet potato in half lengthwise, wrap in foil, and bake at 376°F for 20 minutes or until soft; alternatively, cut into large chunks and microwave for 2-4 minutes until cooked.
Heat raspberries on the stove, stirring often until gooey.
Place the cooked sweet potato in a bowl.
Drizzle with coconut oil or ghee.
Top with heated raspberries, nut butter, coconut yogurt, hemp seeds, goji berries, cacao powder, and 1/4 of a superfood bar or other desired toppings.
