Loaded Breakfast Sweet Potato Bowl

Ingredients

  • 1 small sweet potato
  • raspberries
  • coconut oil or ghee
  • 1/2 to 1 tablespoon nut butter (e.g., almond butter)
  • 2 tablespoons or more coconut yogurt
  • hemp seeds
  • goji berries
  • cacao powder (e.g., Yoursuperfoods chocolate lovers)
  • 1/4 of an Elemental Superfood bar

Preparation

  1. Slice the sweet potato in half lengthwise, wrap in foil, and bake at 376°F for 20 minutes or until soft; alternatively, cut into large chunks and microwave for 2-4 minutes until cooked.

  2. Heat raspberries on the stove, stirring often until gooey.

  3. Place the cooked sweet potato in a bowl.

  4. Drizzle with coconut oil or ghee.

  5. Top with heated raspberries, nut butter, coconut yogurt, hemp seeds, goji berries, cacao powder, and 1/4 of a superfood bar or other desired toppings.
