Sweet Potato Breakfast
Ingredients
- 1 sweet potato (roasted until soft and gooey)
- 1/3 cup of dairy-free milk
- 2 tablespoons of ground flaxseed
- 1 tablespoon nut butter
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- a pinch of salt
Preparation
Simply scoop out the sweet potato flesh into a large bowl, and add in all of the remaining ingredients
Use a hand mixer or a large spoon to mix / mash the mixture all up until nice and soft! You can also use a food processor if you wish
Top with fruits, coconut yogurt, and more nut butter, and enjoy your divine breakfast
