Oatmeal Blueberry Muffins
Ingredients
- 1 cup oat flour
- 1 cup all purpose flour (or more oat flour)
- 1 tsp baking powder
- 2 regular eggs (can sub flax eggs- 2 tbs flax seeds + 6 tbs water)
- 1 tsp vanilla
- 1/2 cup almond milk or water
- 1 tsp lemon juice
- 1 cup blueberries
Preparation
Instructions: Preheat your oven to 350°F
In a medium mixing bowl, crack your 2 eggs and whisk lightly
Add in the rest of the wet ingredients and mix again
In a separate bowl, combine your dry ingredients
Add the dry ingredients to the wet ingredients in two parts
Mix the batter until well combined but do not overmix
Fill up your muffin liners about 3/4 way full (I use these reusable silicone liners from Amazon because EVERY day is Earth day! ?) bake for 20-23 minutes and let cool before removing from muffin liners and enjoy! You can lather on some nut butter or enjoy on its own
