Ultra Fluffy Blueberry Pancakes
Ingredients
- 1/2 cup applesauce
- 1/2 cup almond milk
- 1 tbsp lemon juice
- 1 tbsp maple syrup (optional)
- 1 tsp vanilla extract
- 1 1/4 cup oat flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup blueberries (fresh or frozen)
Preparation
Whisk together the applesauce, milk, lemon juice, maple syrup, and vanilla.
Add the dry ingredients. Stir to combine, don’t over mix.
Gently fold in the blueberries.
Cook (patiently) in a non-stick pan over low heat. Makes approximately 6 pancakes.
Add toppings and enjoy!
