Paleo Snickerdoodle Breakfast Pancakes

Ingredients

  • 1.5 cups almond flour
  • 1 tablespoon coconut flour
  • 2 eggs
  • 1 cup unsweetened almond milk
  • 1 scoop vanilla protein powder
  • 1 tablespoon cinnamon
  • 2 tablespoons coconut sugar
  • 1 tablespoon honey
  • 1 teaspoon vanilla

Preparation

  1. Mix all the ingredients together in a bowl to form a batter.

  2. Heat a skillet over medium heat and add ghee to the pan for cooking.

  3. Pour small portions of batter onto the skillet to make mini pancakes.

  4. Sprinkle the top of the pancakes with coconut sugar while cooking.

  5. Cook until the pancakes are golden and crispy on both sides, flipping as necessary.

  6. Serve the pancakes topped with sliced bananas, honey, and a sprinkle of cinnamon.
