Delicious Snickerdoodle Baked Oatmeal for Meal Prep

Ingredients

  • 2 eggs
  • 2 cups gluten free oats
  • 1/2 cup unsweetened almond milk
  • 1/4 cup coconut sugar
  • 1 tablespoon peanut butter
  • 1 tablespoon coconut flour
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • coconut oil for greasing

Preparation

  1. Preheat the oven to 350°F.

  2. In a bowl, whisk 2 eggs.

  3. Add 2 cups gluten-free oats, 1/2 cup unsweetened almond milk, 1/4 cup coconut sugar, 1 tablespoon peanut butter, 1 tablespoon coconut flour, 1 1/2 teaspoons cinnamon, 1 teaspoon vanilla, and 1/2 teaspoon nutmeg to the bowl.

  4. Mix all ingredients together thoroughly.

  5. Grease an oven-safe pan with coconut oil.

  6. Bake for 25 minutes or until done.

  7. Allow to cool slightly before serving.

  8. Top with Greek yogurt and peanut butter if desired.

  9. Store in the refrigerator for up to 4-5 days.

  10. Reheat portions as needed for breakfast or snacks.
